I have always loved the writing of DON MIGUEL RUIZ today I found a link to a short video- It is a great reminder today to take full control of my reality- and master my attention on what matters-

3 tablespoons olive oil, plus more for greasing
2 pints cherry tomatoes
1 (12-ounce) container fresh mozzarella, drained and cut into (1-inch) chunks
1/2 loaf ciabatta bread, cut into (1-inch) cubes
Salt and pepper to taste
Balsamic vinegar (optional)
1/2 cup basil leaves
Grease grates with oil then preheat grill to medium heat. Meanwhile, alternating ingredients, thread tomatoes, mozzarella and bread onto skewers, brush all over with oil and season with salt and pepper.
Grill skewers, turning once, until cheese is just melted and bread is toasted, 2 to 3 minutes total. Transfer to a platter, drizzle with vinegar , garnish with basil and serve.

She took care of those who were sent home to die. The common life regrets she observed were…
1. I wish I’d had the courage to live a life true to myself, not the life others expected of me.
2. I wish I did not work so hard.
3. I wish I’d had the courage to express my feelings.
4. I wish I had stayed in touch with my friends.
5. I wish that I had let myself be happier.
I hope this reminds everyone our purpose in this life is to be happy. Maybe you could leave work early today? Call up an old friend. Take that risk you have been waiting to take…

| Baked Oatmeal |
| Serves: 6 generously, or 12 as part of a larger brunch spread
Ingredients
2 cups / 7 oz / 200 g rolled oats
1/2 cup / 2 oz / 60 g walnut pieces, toasted (see page 219) and chopped
1/3 cup / 2 oz / 60 g natural cane sugar or maple syrup, plus more for serving
1 teaspoon aluminum-free baking powder
11/2 teaspoons ground cinnamon
Scant 1/2 teaspoon fine-grain sea salt
2 cups / 475 ml milk
1 large egg
3 tablespoons unsalted butter, melted and cooled slightly
2 teaspoons pure vanilla extract
2 ripe bananas, cut into 1/2-inch / 1cm pieces
11/2 cups / 6.5 oz / 185 g huckleberries, blueberries, or mixed berries
Instructions
Preheat the oven to 375F / 190C with a rack in the top third of the oven. Generously butter the inside of an 8-inch / 20cm square baking dish.

So I pretty much followed the tutorial with a few modifications. I designed my own Polaroids in Photoshop using a real Polaroid frame I scanned in (you can download below). I scaled my Polas down to about 0.8″ wide and then printed on photo paper. Using rubber cement, I mounted my printed sheet to chipboard (the back of an old spiral-bound sketch book worked just fine for me) and sort of laminated my mini photos by laying pieces of clear masking tape on top. The paper glaze didn’t work for this project as it was causing the ink to run and bleed.
Once trimmed out, instead of painting the edges white, I used a white opaque marker from Martha Stewart’s craft line, and colored in the edges.

After attaching the magnet pieces to the back, I had myself a new set of magnets

I have tested this recipe with both gluten-free and regular ingredients and I have to say we really enjoyed each version. I was actually surprised that the cheese sauce for the gluten free version turned out just as thick and creamy as the original. The small bite size cakes make perfect appetizers and the crispy cereal crust push these over the edge – so delicious!
Gluten Freely Mini Mac and Cheese Cakes
{recipe can be printed here}
Ingredients:
1 Cup of Tinkyada Brown Rice Elbow Macaroni
3 Cups of Corn Chex® Cereal, finely crushed
2 1/2 Cups of Shredded Cheese of Choice (10 oz)
5 Tablespoons of Unsalted Butter, melted
1 Tablespoon of Bisquick® Gluten-Free
1 Cup of Whole Milk, warmed
1 Egg Yolk, slightly beaten
1/4 Teaspoon of Salt
1 Egg White, beaten until stiff but not dry
The only substitutes I used for the regular version is Regular Elbow Macaroni and Flour {in place of the Bisquick}
